(4) 8 oz Flat Iron Steaks
1 TBS chopped garlic
8 oz container fresh sliced mushrooms
½ cup Red wine
1 cup beef stock
2 TBS unsalted butter (or white truffle butter)
Salt and Pepper to taste
Cooking Instructions
Salt and Pepper Flat Iron Steaks and sear to medium rare or medium. Remove to plate and rest. Add chopped garlic and sliced mushrooms to skillet and brown. Deglaze with Red wine. Add beef stock and reduce by half. Add drippings from plate and remove from heat. Add cold butter and swirl to thicken (mount) the sauce.
