8 oz diced Pancetta*
2 shallots, diced
1 cup white wine
1 small bunch rough chopped parsley
Grated Parmesano Reggiano
4 dozen clams scrubbed and cleaned
*May be substituted with apple wood smoked bacon. Try our Neuske Bacon.
Cooking Instructions
In large skillet with lid, cook pancetta and shallots in small amount of Extra Virgin Olive Oil. Once pancetta has been rendered, add clams and white wine. Cover with lid, steam 3-4 minutes until all clams have opened up. Remove from heat. Dispose of unopened clams. Top with fresh chopped parsley and grated parmesan.
